- Toasted corn tortillas
- 2 eggs
- 1/2 avocado
- 1 bag of Ridetti refried beans 227g
- Chives
- Optional: sour cream and Salsa Ranchera
- Heat up Ridetti beans in a skillet.
- In the same skillet, cook the eggs sunny side up, until the yolk is in your desired state.
- Cut avocado into strips and finely chop the chives.
- On a toasted corn tortilla place a layer of beans, then add the eggs, acovado and chives.
- Optional: Add sour cream and/or salsa ranchera.
