1.  Heat up Ridetti beans in a skillet.
  2. In the same skillet, cook the eggs sunny side up, until the yolk is in your desired state.
  3. Cut avocado into strips and finely chop the chives.
  4. On a toasted corn tortilla place a layer of beans, then add the eggs, acovado and chives.
  5. Optional: Add sour cream and/or salsa ranchera.
